Broccoli, pea and kale soup
Serves 4
Preparation time 10 minutes
Cooking time 10 minutes
Ingredients
300g Broccoli florets
600ml Vegetable or chicken stock
150g Frozen petit pois
50g Kale trimmed
2 Tbsp olive oil
Method
Put the broccoli into a saucepan with the stock and bring to boil
Simmer for 5 minutes
Add the peas and cook for 2 minutes
Add the kale and cook for further 2 minutes
Cool slightly and blend with hand blender until smooth
Add stock if needed
Warm up and add a spoon of Greek yogurt on top
