Courgette, leak and Tuscan kale soup

This is one of my favourite soups that I created. There is no cream in it but the courgette gives it a very creamy full flavoursome taste.  I adore this soup as I have been trying to really increase the amount of vegetables that I eat every day  I love the idea that this soup is so full of different ones. It is so warming and filling on a cold Autumn evening.  This is what we will have for supper on a Monday night.

Serves 4
Preparation time 5 minutes
Cooking time 15 minutes

Ingredients
5 courgettes
3 leaks
200g of Tuscan Kale
500ml of chicken or vegetable stock
Knob of butter/ 1 tbsp olive oil

Method
Thinly slice the courgette and leaks.
Put into a saucepan, on a very low heat, add a knob of butter or a tbsp of olive oil cover with tin foil and cook for 10 -15 minutes the vegetables will soften in the steam.

Once soft add 500ml of chicken or vegetable stock
Roughly chop the kale and add it, bring to a gentle boil
Then use a hand held blender
If you like smooth soup blend more and less if you prefer texture.
Simmer for about 5 minutes until hot.
Add pepper to taste.
